We teamed up with our good friends over at O5 Tea to track down some top shelf matcha from Japan. We had no idea it was going to lead us to the legendary Tsuji Kiyoharu, a fifth generation tea grower who is the only living matcha farmer to havereceived awards from the Emperor....3 times!He has also earned multiple medals from Japanese Ministry of Agriculture, Forestry and Fisheries.
Tsuji Sensei started his quest for top shelf umami when he was only 20 years old; having asked some of the best known tea experts for advice, he invariably received the answer: "Start by learning in the fields." And so he did; acknowledging that tea fields are a universe of ever-changing variables, Tsuji San has learned to ‘listen’ to his tea trees every single year. Organic fertilizer, shade, harvesting times and tea making techniques are adjusted accordingly. We can guarantee that this micro milled matcha from Tsuji San will be unique and simply exceptional.
Tea: This limited production (only 100 units were micro-milled) is a luscious tea made with 60% Samidori blended with 40% Yabukita. Incredibly smooth, bright and aromatic, with lingering umami. It's literally the best matcha we've ever tried!
- Traditional Usucha (thin tea): 1/4 tsp (~2g) tea, 2.5oz of water (~70ml) @ 167F (75C). For detailed instructions check out the tutorial we shot with Pedro at O5 Tea
- Iced Matcha: For an energizing, thirst quenching, pre-workout drink, shake 2g of tea on 8oz (~240ml) of water and crushed ice. Sparkling water is a great option too.
